Finnish Blueberry Pie

Over the Easter holiday I made blueberry pie with an old favorite Finnish recipe. I had posted a picture of it on my Instagram account and a few people asked for the recipe. The original recipe calls for kermaviili, but I haven’t been able to find it in the US. So by trial and error I have concluded that full fat natural Greek yogurt seems to do the job. I especially like the Fage kind. Also the recipe doesn’t make the pie very sweet so if you are more of a sweets person or your blueberries are a bit bland, you might want to add more sugar for the filling. Vanilla sugar is sugar flavored with vanilla extract and is very common in the Nordic countries. You can purchase it at least from IKEA, or make your own by flavoring the sugar with vanilla.

INGREDIENTS:

For the crust:

100 g butter

1 dl sugar

1 egg

2 dl all purpose flour

2 tsp baking powder

1 tsp vanilla sugar

For the filling:

1/2 l blueberries

1 dl natural Greek yogurt (kermaviili)

1 egg

1/2 dl sugar

STEPS:

  1. Whip together softened butter and sugar. Add the egg to the mixture. Mix the dry ingredients together and gently fold into the batter.

  2. Spread the dough on a pie plate (I used a 10” one). Sprinkle the blueberries on top and finish with yogurt-egg-sugar mixture.

  3. Bake in a 180-200C (~395F) oven for about 30 min.
