Three Ingredient Zucchini Halloumi Fritters

While I am always looking for delicious recipes for vegetable fritters or patties, this one goes to the category where I have been debating in my head whether to post the recipe or not as it is so simple. Obviously decided to go for it so, please don’t laugh! These turned out quite delicious and are so easy!

I originally saw this concept in a food magazine earlier this past summer but wasn’t able to find it anymore so came up with my own. You want to select the skinniest zucchini there are as they have less seeds and thus less liquid in them. You could make this work with thicker ones but then I would scoop out the seeds before grating. Make sure you mix the eggs properly into the batter as they make the fritters stay intact.

I served them with a spicy yogurt sauce but they would work well with a fresh green salad or even in a sandwich.

The recipe makes about 15 fritters and serves 3-4 people.

INGREDIENTS:

2 slim zucchinis grated

8 oz piece of Halloumi cheese grated

2 fresh eggs

olive oil or butter for frying

STEPS:

Grate the zucchini and squeeze the excess liquid out of them (you could also add some salt and let them sweat for a while).

Grate the Halloumi cheese

Mix together the grated zucchini and cheese. Add two eggs and mix thoroughly.

Heat the oiive oil (or butter if using) in a frying pan over medium heat

While the pan is heating heat the oven to 200F

Add spoonfuls of the batter to the heated frying pan and press down with the spatula so that they are flat. Let them cook (don’t touch, they will break if you do touch them too early) until the edges start to brown lightly. Flip the fritters and cook on the other side. When done, move the fritters on a parchment paper lined baking sheet and put them in the oven while frying the next batch. When all the fritters are done, let them bake in the oven for an additional 10 min so that they all get nice and crisp.
