Cabbage Stir Fry with Spicy Kick

On one recent cold blustery night I was craving something warm and comforting. Remembering the cabbage stews from my childhood which took hours to cook, I wanted to make something quicker but still satisfying for a weeknight dinner. 

Ingredients

1 tbsp olive oil

1 small green cabbage

1 medium yellow onion

1 lbs. ground beef (I used 90% lean)

2 cloves garlic chopped

2 jalapenos chopped

1-inch piece of fresh ginger

Freshly ground pepper

Pinch of cayenne pepper (if using)

Red pepper flakes

3 tbsp lightly salted soy sauce

Fresh cilantro

Steps

  1. Heat the olive oil over medium heat in a large skillet

  2. Brown the meat until cooked through

  3. While the meat is browning, cut both the onion and cabbage into strips and add to the meat

  4. Reduce heat to medium low and keep cooking until the cabbage starts to soften

  5. Add minced ginger, garlic and jalapenos

  6. Add peppers and soy sauce and mix well. I like to cover the skillet with a lid and let the cabbage get to the desired level of softness

  7. Garnish with fresh cilantro and enjoy with some fresh bread on side.
