Vegetarian Tacos

I have been trying to eat a more plant-based diet lately. These vegetarian tacos are a good example of how you can add flavor to your food without using meat.

INGREDIENTS:

1 tbsp olive oil

1 medium yellow onion

3 cloves garlic

1 can (15 oz) black beans rinsed

2 jalapeños

1 cup of frozen fire-roasted corn

1 cup of fresh baby spinach

2 tsp chili powder

1 tsp cumin

Salt and freshly ground pepper to taste

Fajita size taco shells

1 avocado

½ cup pepper jack cheese

Fresh cilantro

STEPS:

1. Heat olive oil over medium heat on a non-stick skillet

2. Cut onions to strips and add to the skillet and cook until soft and translucent

3. Add the minced garlic and cook until fragrant 

4. Add the fire-roasted corn, black beans, and chopped jalapeños

5. Cook until thoroughly heated through

6. Add chili powder, cumin, salt, and freshly ground pepper

7. While the filling is cooking place tortillas directly on an oven rack and heat until warm and a bit crispy 

8. Add the spinach to the skillet and cook until wilted and well mixed
